Ingredients (makes 2):
4 eggs
4 tsp milk
Salt and pepper to taste
Cooking oil for the pan
1/4 cup grated cheese or crumbled cheese
Lots of microgreens
Any other veggies you like!
Instructions:
Heat oiled pan over medium heat
Whisk together eggs and milk and pour into pan
Add salt and pepper
Flip egg when the bottom is cooked
Add half of the cheese
Once the other side is cooked, transfer to a plate
Top with the rest of the cheese and microgreens (and any other herbs and veggies you like!)
Fold in half and serve with buttered toast
